What a wonderful time of year! We still have our summer crops producing abundantly, and fall crops are just beginning to give us their best!
This week's share will be:
Swiss chard, beans, red onions, beets, spaghetti squash, shishito peppers, bok choy, red-skin potatoes, sweet corn, and choice of an herb (cilantro, dill, parsley, or thyme). Premium shares will also include dandelion greens and scallions.
Fruit share members will also be receiving Sweetie apples and Santa Rosa plums!
Swiss Chard
Don't fear the chard! My neighbor and friend always takes my chard from my CSA share, because her kids LOVE it. If little kids love swiss chard, you know you have nothing to fear :)
Try a simple saute:
Spaghetti Squash
A delicious, low carb whole food option!
It's easy to make, too!
...and try this Spaghetti Squash with Chickpeas and Kale!
Shisito Peppers
In Japan, in summer, these prolific peppers are often eaten raw. Here in the USA they are most popular charred and blistered. I simply toss them in a skillet with a little bit of oil, then let blister in the pan on each side. You can also grill them. I then dress with a squeeze of lemon and a sprinkle of salt!
If you have "dippers" in your family, here's a great recipe for charred shisitos with a garlic aoili dipping sauce!
Santa Rosa Plums
Like any plum, you can cook these in a tart or cake (see previous blogs for recipes!) or eat fresh!
Here's a recipe for taking advantage of the gorgeous red color of these plums, and preserving them to enjoy all year!
BEETS
Also sweet and red, are BEETS! I've shared many ways of enjoying beets over the years.
Boil and slice, roast, grate into salads and slaws, pickled, sliced on sandwhiches, cubed into salads, the options are seemingly endless. Well how about candied beets? A yummy side dish to whatever meal you're making this week!
Apples
Apples are great cut into salads, plain as a snack, you can cook them down to apple sauce or butter, dice into salsas, bake in pies and tarts, cobblers, cakes, you name it.
If you want something a little sweet without overindulging, how about some no sugar added Baked Apples?
And we've only just begun harvest season! Enjoy the end of summer and the cool beginnings of fall! See you next week with more ideas!
