Falling for Veggies!

Wow, Everyone - It's October already! I can barely believe it. But as I cook down my tomatoes, and start making more soups, and I catch myself dreaming of homemade cookies, chai, and roasted veggies, it's clear that my subconscious has figured out it's time for loving the fall!

The CSA is going strong with lots of deliciousness this week!

This week's share will be: Lettuce, beans, zucchini, kale or chard, choice of arugula or broccoli raab, salad turnips, broccoli/cauliflower, yellow onions, sweet potatoes, spaghetti squash, colored peppers (this week or next), and choice of an herb.


Let's look at some ideas for using these delights this week! and in case you have some leftover veggies from last week or week before, let's toss around some ideas for those!



Beets and Shallots

If you're like me, you love beets and shallots, but sometimes don't get around to cooking them as quickly as you intended. a week or two, or (gulp) three or more later, you've still got perfect beets and shallots sitting around!


Well, I often pickle those beets, and shallots too! they're a great addition to sandwiches and salads or charcuterie boards. Check the blog for pickled beets and pickled shallots recipes!


If you have a puff pastry or pie crust in the freezer, you can make this AMAZING beetroot and shallot tarte tartin, with roasted garlic and fresh herbs, all of which you may have from the CSA pickups or your gardens. Make it and impress everyone!!!


How to peel Shallots

Got a ton of shallots, but havent used them cuz they're so difficult to peel? Don't worry, there's an easy way!


  1. To soften the skins, blanch the shallots first – cover them with boiling water and stand for 5 minutes. Honestly it doesnt even have to be super boiling. I use the hot water from my water cooler and let it sit 5 minutes or however long until I get to them!

  2. To peel, use a small sharp knife to trim the base from each shallot then pull back the skin to remove. It's that easy!


Shallot Jam

What to do with those bags of shallots? make a delicious savory sweet jam or marmalade!

You can combine with other autumn fruits like figs, apples, etc! there's many recipes out there!


Southwestern Salad

Use that lettuce, tomatoes, peppers and other fresh veggies and herbs to make this tasty salad!


Veggie Stir Fry

a great one for zuchinni, peppers, onions, broccoli, corn, even can add beans, carrots, cabbage, whatever you like!




Unstuffed Pepper soup

If you have an instant pot or pressure cooker - this comes together so quick and easy! you've got a hearty amazing meal in no time!



Sweet Potatoes

Grill them, roast them, throw on salads, in curries, nuke them and throw butter and cinnamon on top. Or try this fabulous recipe for meditteranean baked sweet potatoes!
